So, this post was originally going to be about something entirely different. The reason for this change was because I ended up coming down with a bad flu for a couple of weeks, which derailed a lot of things I had going on. I’m sure most of us have came across something like that the last few years, but unlike Covid, this was just an annoying bug that I grabbed from somewhere. Might’ve been the cultural festival I went to, who knows.
At any rate, being sick sucked. Contrary to what some might believe, I’ve always felt that the worst part of a flu is a sore throat. It’s scratchy, super uncomfortable, and I find myself constantly swallowing to get rid of whatever that itchiness is. I don’t really know why I keep doing that, because it has never really worked for me. The best I can do is take a lozenge and hope for some quick relief. Spoiler alert: it works better than constantly swallowing, but it’s still not great.
Now, while it was often hard for me to get out of bed and do basically anything, I kept dragging myself down to the dining room every morning to have some breakfast, which I hadn’t been doing at all for the last several months. I often went without in the morning due to a mixture of laziness and time constraints, but I knew that I needed the energy. So, I sat down to a plate of toast, fruit, eggs, and a large glass of milk every day that I was sick, and I polished my plate every single time.

And man, the more I thought about it, the more realized how good eggs really are. I mean, I’ve always liked them, but I had never really considered how versatile they are. I mean, come on, there’s hundreds of ways to cook them or incorporate them into dishes, and there’s virtually no limit to what you can do with them. In essence, they could be looked at as the perfect food.
Personally, if you ask me, the best way to have them is scrambled, like in the picture above. Now, not too scrambled, because that tends to turn into this runny paste that doesn’t sit well with my stomach. It needs to be crunched and served in mixed chunks, not like that near-liquid stuff I’ve come across at various restaurants. Call me crazy, but I honestly don’t think eggs were meant to be whisked and battered to death.
However, I don’t think it’s wrong to have them that way. Do I like it? No, and I never have. But, some like having their eggs that way, and that’s ok. It goes back to that versatility I mentioned, and how there’s hundreds of recipes. The way I see it, there’s an egg dish for everyone. You can have them in curry, in pasta, and in fried rice (which I personally love). Meanwhile, if you just want the eggs, you can smoke them, scramble them, boil them, or just plain fry them. There’s no wrong way to make them, unlike so many other foods. Eggs are flexible, just like the human will.

Now, it’s been around a week since I’ve fully recovered, and while I’m busy catching up on things that I need to get done, I’m happy to report that I’ve been keeping up with having my breakfast in the morning. Getting as sick as I did was sort of a wake-up call to me, and I’ve done my best to honor what I think God was trying to tell me. It’s been good for both my energy throughout the day, and for the heartburn I sometimes have in the morning. Overall, a big plus all round.
